HLSR is a huge event. Probably 250,000 people this year. Many of the teams have 200-400 guests, some way over 500. This event has raised over $125 million for college scholarships. It is very corporate and way beyond what most of us think a cook off should look like. A site with 6-8 bartenders needs security. The Go Texas Teams may have a cook and a couple of helpers and no party. They have around 30 shoe/boot shine stands. One team cooked two 200 lb hogs each day from Wed -Sat for their guests. That is eight hogs.
