at 2 oz - 2250 lbs cooked weight or 4500 lbs as Mack said. Now I have 3 FEC100's in my trailer so I can cook 48 butts @8 lbs per butt so that's 384 lbs. Based on that you would need about 12 cooks plus 12 helpers. Assuning minimal trimming 2 of us can prep that much in about 90 minutes. It takes longer to pull and sauce. Cook hot at 275-300 and they should be done in 8-9 hours.

But if you used sauce in a ratio of 1 lbs of sauce per butt - that's roughly 1/8 of a gallon, then you would need less pork.

BUT if you need 2 oz of volume not weight (using a 2 oz serving cup) then I think you need mroe weight per cup. This is one I still need to test. We just started giving out little sample cups when vending for a dollar but we use a 1 oz cup and I haven't weighed them yet.
