If there is an ancillary dish with open garnish, the table captain should be told to pick up the presentation containers, clean them as best they can, and return to the turn-in table. At a contest that I rep, this is covered at the cooks meeting. They have the entire night to claim their dishes. As Bunny said, if they still haven't claimed them the next day, they will be "schlepped" to awards. If they still are not claimed, they are given to the organizer to do whatever.
