I have a cook coming up that i need some advice on. I will be cooking (6)-9lb butts to a temp of 195 degrees. My problem is that I need to get them done at 5:00 a.m. I wont be serving them until 11:45 a.m. What is my best option? Double foil and place them in a cooler with towels or double foil and hold in the oven at 140 degrees? Are either of these ideas any good? Thanks for any input.
