I've been a lurker (and occasional poster) on this board since the very early days....hard to believe it but I've been learning from this site since the mid 90's.
We've been trying to decide which direction to go on knife sharpeners and looking for advice just once more before we pull the trigger. I've had a Lansky system in the past and it got the job done decently but looking to step up. Cooks Illustrated recommends the Chef Choice sharpening machine, however, I've heard many of you strongly recommend against ANY machine. We're leaning towards the Professional Model Edge Pro but it sure is expensive. We don't mind the price if the results really are exceptional with razor sharp edges, even for someone who has limited experience using this type of sharpener. If anyone could offer any thoughts and opinions (good or bad) on the Edge Pro or any other sharpener recommendations that you might have, it sure would be appreciated.
I've appreciate all the advice I've received from everyong in the past.....it's allowed me to become a pretty decent Q'er.
