Before I say anything else I want to thank you for the kind comments and many years of visiting the BBQ Forum. As for the knife sharpener I am convinced that the Edge Pro must be the best because of the many comments from quality people on this forum, over the years. I put a lot of stock in comments from quality people. But I don't have an Edge Pro because it costs too much and I think it takes more time to sharpen knifes than I want spend.

I have a lot of good knifes. I like knifes. I have some very good kitchen knifes, several hunting knifes and more than a dozen folding knifes. The folding knifes are the ones I really like, SOG, Spyderco, Byrd etc. I run them all through my Professional Chef Choice sharpener. This sharpener is not cheep but it does the job really quick. I just sharpened my SOG flash 1 and the light weight A.G Russell in about five minutes. They are both sharp enough now to gain the respect of anyone who has ever touched a sharp knife.

Like I said the edge pro has to be good. But I had to give up a lot of thins in my life that I like to do, because they take too much time. I am just too busy.
