Just a follow-up on my post. I had a Chef's choice 120. It did a credible job. But I have some knives I just could not bring myself to put on a mechanical sharpener.
You can't do ceramic knives on the Chef's Choice.
I have some Shun Japanese knives that I wouldn't dream of sharpening on anything but the Edge-Pro, or by hand, if I was that skillful.
Some knives require different angles. On my Chef's Choice the Chef may have had a choice, but I didn't have any choice of blade angle.
As for being too busy... I can't tell you how much I enjoy taking an hour or so on the porch in the evening with a few knives and the Edge-Pro. Very relaxing and therapudic.
