Two sided stone and a ceramic stick. I use the stick every half hour of cutting, the stone only comes out if I forget to put a knife away and it goes in the dishwasher.
I think a person should develop sharpening skills, 'cause you never know when you might be called on to carve something and there's no sharp knife in the house.
I've used an unmounted bench grinder wheel, the back of a ceramic tile, the bottom of various plates, cups, and saucers...and the edge of a truck window.
