To add to this, if the majority of what you see in the tent is "adulterated" meat then you have to judge the best of that meat. Over time if the majority of what judges see is injected meats and candy ribs or, let's say the person's only been judging for the last couple of years or less then injected and candy is pretty much all they know so that's what they'll expect. I can't count how many judges have said they're getting weary of all the sweet or steroid injections So the usual next statement is "then why do they win?" Well, if that's the majority of what hits the tent then what do you expect to happen?
If the majority of teams chucked the "steroids" and went "naked" as it were then I believe you'd start to see that wining regularly.
I wonder if you took a tent full of older long time judges and sent in a majority of old school naked bbq (no injections, no candy just your basic rubs and/or sauce) how the scoring would come out? Maybe worth a try?
