Nobody is telling judges what it should taste like. Nobody is telling judges that uniformity is what a chicken box "should" look like. Based on how judges have scored boxes on here and comments judges make, some judges have and will score down if your chicken, ribs etc aren't all the same size or shape. So teams have gotten creative in trying to make everything look the same.
Less instruction is what the judges have been getting.
They score down if the chicken skin isn't bitable, because they don't have any experience with smoking poultry,most have probally only had fried (which would have crispy skin) or baked.
A lot of the things teams do their entries stem from judges looking for or expecting things based on something other than what they were taught in class.
I have even heard a judge scoring down, because the pork was not cooked at the proper temp.
A judge who couldn't tell the rep what piece of chicken did they sampled.
Brisket with the fat through it. Judge scored down because he didn't know that was the way a whole brisket is and this judge didn't like fat. It be about ordering prime rib and sending it back because it had fat on it. It is supposed to be that way, however the judge didn't know that before he scored it.
