Again, nobody is telling judges that they should all be the same. All I'm saying is if judges understand that 1 chicken doen't have 6 thighs, so therefore you might have thighs that differ in size and shape. Even if they did come off the same animal, chances are they would still be a different size. One side of their body is different than the other.

Again!, nobody told they had to like it.I don't like fat either, so I just don't eat that part of the brisket, and I don't score down because the entry has included fat...............because I am also a cook as well as a judge and know that the fat is part of a whole brisket ( I also know that a flat brisket may or may not have the fat included)

If I did not know these facts I might score down as well.....not knowing any better.

I just think judges would score differently if they fully understand what they are judging, the nature of the beast so to speak.

To change the problem is not to tell them what it looks like, but to educate.

Just as when a master judge does their cooking with a team, most time the judges eyes are opened to a lot of things the teams go through. I remember when master judges didn't have to cook with a team. And some are really amazed and had no idea what goes on behind the scenes.

How much of the public and judges who don't even know what you are talking about when you talk about the meat grade or even what animal a particular meat comes from?
