Ok, I'll concede that they can tell judges to take a bite from the middle of the rib. But what are you going to tell them about different cuts of ribs? Babybacks tend to be meatier while spares have that evil gristle at the ends- so I turn in spares and get dinged because the judge wanted babybacks. Or St. Louis cut is more uniform and more forgiving - so I turn in babybacks and get dinged because they're not as uniform and the judge is trying to figure out what "more forgiving" means. If we're teaching them about barbecue, great. That's the point. But if we're teaching them to affect how they score a rib, I don't see the benefit.
Open the box: judge what you see. Take a bite: judge what you taste. And cooks, cross your fingers, because Smokaholic nailed it: there's a whole lotta luck involved - "it's a carp shoot."
