One reason the judges expect bite through skin on chicken may just be because that's what the judges class taught 'em to look for? At least in the classes I've sat in on.
As for education, I do think you ought to know the difference pieces of a chicken since they do taste different (don't laugh, not long ago a couple of judges commented on some meat saying it was one thing when it was clearly something else. Other than that you can't teach taste unless you can present the absolute bar none best bbq as an example for people to bench mark against. Maybe the top 10's leftover meat from the royal or jack should be saved and used on a big judges class for bench marking?
