I think, in part it depends on what kind of heat you want. Some heat is "up front" like Tabasco or habanero while other heat is more mid-palate like New Mexico peppers while other heat is more "back or the palate" like black pepper. IMHO, most successful heat has a bit of all 3 in a nice balance. Ultimately, though, it depends on what your goal is. I'm not nearly as knowledgable about all this as I'd like to be. Maybe some of our rub makers can weigh in on this in more detail. Good Q'en On Ya'. John
