The best brisket I ever cooked was a whole brisket, didn't trim it casue I didn't know what I was doing. Just put a little salt and pepper on it. Was AWESOME. Yep, keep the fat. Also it need a good fat marbling, kind of like a good steak. Just my 2 cents.
