jafcook - you can "insulate" the cooker by laying wool blankets (army surplus) over the smoker of cold days and nights. I made a 'custom' blanket for my offset by taking a large welding blanket and folding it in half with a moving blanket in the middle. Sewed around the edges. Make cutouts for temp gauges, counter balances, whatever you need. They work great and cut down on a lot of fuel.
