WHY??? What I've found out is if the FEC 100 is empty, it has a tendency to run high. However if you put a couple butts, briskets, etc. and/or fill the FEC 100 mine has leveled out in temperature.
Try placing a load of meat in the FEC 100 and wait 3-4 hours and see if the temps are closer to your setting(s).
