You can use charcoal only, all you have to do is to turn off or disconnect the propane tank. You will still set the control to the temperature you want to cook at because the blower on the burner will still work. So when the temp dips down the blower will blow air across the charcoal to stoke them up. We will be making a grate or maybe a modified tray to slide in to help hold more charcoal and it will allow you to pull out ashes to keep the charcoal burning better. I don't think they have that finalized yet but it is in the works.

I used this oven in a competition last year when we were testing it out, it worked great, I added a little charcoal about every 45 mins or so to maintain the temp i needed.
