I'm looking for a smoker that I can cook cased sausage on at a fairly constant temp. I'm not going to make any huge quantities. I want to make kielbasa and experiment a bit. I'm thinking that the electric model will give me the lower temps that I need to start. I've used a WSM with ice in the pan and a box smoker, that I rigged for sausage with a bit of charcoal in it. Any advice will be appreciated. Rick.
