Dave, it was a serious answer. Many people who age briskets buy them by the case and the case has the kill date. 50 days is about the max to do for briskets if you keep it in a dedicated fridge that's 38 or below. can't do it in a fridge you open all the time, the temps will vary.

I age my prime ribs this way, in my contest fridge for between 40 and 50 days.
