Got hold of a Buffalo Brisket that I will cook this week. Couldn't really find much about them archive wise, it's not very big...maybe 3 lbs. Right now I figured on cooking it same as a regular brisket expecting a much quicker cook and perhaps utilizing some fat trim I have off some beef ribeyes. I would appreciate any thoughts or advice.
