As he said, he did mention that and also wants to experiment with sausage at 'consistent lower temps', probably like cold smoking and such. Cookshack and Southern pride would both fill that. Not every pit, even Stump's will fill every nitch, all the time, for everyone. A fine pit I'm sure.
