I'll go 25 days after the "sell by" date if I don't know what the date was on the case. The info on a dedicated refrigerator is correct. You will have problems if you try to do it in the kitchen fridge. (temps vary too much above 38°.) If you start seeing bubbles in the cryovac, time to put it in the freezer or cook it.
