I'll go 25 days after the "sell by" date if I don't know what the date was on the case. The info on a dedicated refrigerator is correct. You will have problems if you try to do it in the kitchen fridge. (temps vary too much above 38.) If you start seeing bubbles in the cryovac, time to put it in the freezer or cook it.
