Pulled brisket? You cooking whole packers or flats? I'd suggest whole packers and utilize the points with the finished meat. Take most of the fat out before chopping. You will need about 23#s of finished brisket for 100 sliders. Brisket yields vary, but if you start with 45# or raw meat you should have some leftovers. (unless your daughter is inviting the football team.)
