Everyone, there is a great article in the New York Times today about cooking ribs without a pit or smoke flavor. The techniques have some of the food science used in comp cooking and others as well. A lot of content to consider. It seems well done but I need to read it again to digest and am putting a link here for comment. I hope the link works. M.A.
