I cooked chicken quarters in the Weber Kettle this afternoon for dinner, cooking indirect. Put a handful of wet wood chips on top the hot coals and got a little more smoke than I wanted, although my spouse thought it was OK. I guess the bottom line is that I don't like a lot of smoke on chicken. I may stop using any wood chips and just cook it with charcoal. Do any of you that cook chicken in a Kettle ever throw anything on the coals other than wood? For example, a couple of garlic cloves, some rosemary, or whatever?
