When I competed, we used complex rubs and injections for almost everything, just like most competitors. But, when I cook at home, I like to keep it simple. My favorite for yard bird is salt and pepper, ribs is Willingham's Original mixed with equal parts baked brown sugar, for butts is purely kosher salt and freshly ground black pepper and I only cook brisket when my youngest sis from Eureka, Mo, visits and insists that I cook it. IMHO, simple is best for cooking at home . . . unless, of course, you're practicing for the circuit. Good Q'en On Ya'. John
