This is an easy recipe.
4 ears of corn
1/4 cup olive oil(veg. oil is fine)
2 large tomatoes
1 small-med. red onion diced(yellow or white is fine)
2 Tbls. cider vinegar
1 Tbls. chopped cilantro(parsley is fine)
2 1/2 tsps. hot pepper sauce
1/4 tsp. salt
Cut corn from cob (3 cups)
Heat oil in 12" skillet, add corn.
Cook until tender. (set aside to cool)
Combine tomatoes, onion, vinegar, cilantro,
hot sauce and salt.
Stir in corn, mix well. Refrigerate,
p.s. If you use canned corn, you still need the oil, you just skip the cooking step.
