I smoke lot of whole chickens then freeze them with my FoodSaver. I smoke mine at 250 for about 3-1/2 to 4 hrs. I also use Kosmo's Chiken Soak for whole chickens. I would check it out it is good stuff, and can be also used on whole turkeys. jsut need soak, water and a cooler or 5 gal. bucket. I let mine soal for 18-24 hrs.
