Untrimmed whole spare ribs

Hi...have some friends coming over and have a rack of untrimmed spare ribs to serve...just found out they are bringing friends was wondering if anyone serves the whole rib, untrimmed instead of going out and buying a second rack...pork very expensive this week? The upper part is usually cut and used for baked beans but in this case was thinking of serving the whole rib. Heard of places doing it, after cooking do people cut the upper part off and serve it as it is pure meat... Plan to smoke it for about five hours so no worry of tenderness..lmk
