Grease makes fire, not smoke.
You want to keep your airflow low enough so your fuel is smoldering, not actually burning. If you try this with fat, you will make smoke, but there is a big danger of flashback - a monster flare when you open the cooker and air rushes in to enable flash combustion of the volatile gasses produced by the smoldering grease.
My advice is stick with plain wood, maybe soak a few logs after you have a good coal bed going. And of course keep your airflow down.
