I smoked a tukey last year for Thanksgiving and it was awesome what I did is below:

I brined mine with Kosmo's Chicken Soak for 24 hours
After brining make sure to wash off bird thouroughly
Used my competition Lazy Bacon BBQ Pork Rub. you can use any pork or chicken rub. (if you do not eat the skin then just use salt and pepper no reason to waste good rub on the skin if you are not going to eat it. You can also peel the skin back and add rub directly to the meat if you want.
I smoked mine at 250 for 5-6 hours with apple wood.
spray with water or apple juice every hour after the first two hours (usually the rub is set in after two hours if you spray with water before you could wash off the rub). after bird is done the let sit for about 30-45 minutes and then slice or shred.

That is how I did mine.
