has anyone here ever tried making beef or buffalo bacon? i've ordered a buffalo belly from a local buffalo grower(or whatever they're called), and probably should get some advice before i make the worlds most expensive bad bacon. i thought about picking up the whole buffalo, but figured it would hang to far out of the back of my truck. that, plus i would have to call the isu meat lab to save me again, after i hoisted it home. maybe i should buy the whole thing :).
