I cook several hundred pounds of Tri Tip each year. In fact I'm doing 30 pounds this weekend. If you buy the trimmed or "peeled" Tri Tip, you will not see much fat or a fat cap. If you buy the untrimmed, you will often have a cap. Costco seems to have more fat on their Tri Tip then Sam's Club. I personally trim all the exterior fat and silver skin off my Tri Tips. After trimming, I season and cook in the smoker at around 250 degrees until i get an internal temp of 135, about an hour and a half or so. I then take off and wrap in foil and rest for about 20 minutes before slicing. I slice the whole Tri Tip in half with the grain, then slice my serving from each half, against the grain. I pour the pooled juice in the foil over the slices. Hope this helps.
