Smoker advice for novice cousin of mine

Hi...made some pork brisket and beans on my 1/4" offset recently and my cousin is keen on giving it a go...went to a local BBQ store and saw a similar unit good and sturdy, and a Traeger which seems dumbed down and convenient. They are a friendly bunch at the store and recently made some smoked chicken on the Traeger...nice and moist but it could have very well been cooked in an smoke ring, no smoke flavour. I may very well like it a bit smoky as I find commercial restaurants pretty flat in smoke taste as well...but trying some awesome Q at MiM a few years ago has set my tastebud standards pretty high...Question, can these pellet units pack a smoky punch or are they typically this way? I know on the Traeger there is a low and high setting for smoke.. I don't want to steer her in the wrong direction but I am charcoal/wood guy all the way and I am willing to babysit the unit for the smokier end result. Thanks
