I have a vertical smoker (BWS Competitor) and cannot cook a whole hog. i have a friend from Eastern NC that does not like smoked TN style pulled pork and wants me to try to duplicate his favorite Q. if i slow cook a butt, picnic, a ham, a loin (or two) and maybe a tenderloin, pull it and mix it together, will that come close to East Carolina Q? i can make a vinegar based sauce but i want the texture and flavor of the whole hog experience with not as much smoke. I thank you in advance for any help or suggestions (short of ordering direct from Parkers in Wilson)
