Pellet cookers can and do produce excellent smoke flavor. A Traeger is old technology and they are now being sold cheap. Beware. Go Memphis, MAK or Fast Eddy/Cookshack (new Yoder is interesting).

Using pellets is not "dumb down". Rather it is useful technology that provides excellent temperature stability with much less work. You still have to be a good cook.

A good cook can do great chow on a $39 K-Mart charcoaler. Think of your cooker as one of your primary tools along with your recipes, sauces, rubs, etc.
