According to The Field Guide to Meat, other names are Butcher's Steak, Butcher's Tenderloin and Hangar Steak. It's "a small, intensely flavored, odd-shaped cut that "hangs" from the diaphragm." Better known in France and most butchers keep it for themselves. Only one to an animal.
