Just thinking it would set-up/gel to the meat better. Others have used 'flavored jello' to rubs, I have used Crystal Lite in rubs for the fruity thing like raspberry, so was wondering if using unflavored gelatin made any significant difference in the spice rub coating when cooked. I have a bunch on hand I use for making head cheese so it's only a reach away.
