My opinion only, the fruit juice thing can get over done and taste too much like the juice. Better off, if your flavor is where you like it already, is to use some unsalted broth or even plain water. Over time flavors may dull some just by virtue of being held too long, then boost with a bit of juice or seasoning. Repeated adding of apple juice at least to me, gets a bit much.
