I mostly use straight Kingsford. Ive noticed that you can not have the fan on too high or the temps will drop. As far as temps stabalizing...never had a problem.

How are you lighting the charcoal? Chimmny minion method style or are you using the propane to get going and then disconnect?

Also do you have the larger comp charcoal basket?
