It's pretty much what the name implies, they invented a canister that you put meat or whatever in with a liquid marinade and put the lid back on. You then suck the air out creating a vacuum and place it on it's side on top of some electric rollers which tumble it like a clothes dryer. The vacuum sucks the liquid into the fibers of the meat and the tumbling distributes it evenly.
I've seen a lot of butcher shops use it for Tri-tip and Brisket.
