I make bacon all the time. My favorite is using a 2 to 1, and some time 3 to 1 salt to sugar ratio. The higher the sugar the darker the bacon cooks up. I like to add different seasoning salts, my favorite is adding pork sausage seasoning from Planters Spices in KC. Always brush with real maple syrup before adding the dry. I preffer apple wood with a touch of hickory, and I preffer to remove the skin first. I don't do nitrates, that's why I do my own bacon.
