What a great article! Very well written and thoughtful. Looking forward to the whole series. Been doing this for a while and learned something new. Love the thoughts on red as a factor. My only question is really about the smoke ring issue. I know what the rules say, but I believe that most judges can't resist scoring a brisket with a good smoke ring higher no matter what they are told, and despite their best intentions. Its too compelling. Has something to do with red I'm sure.
