Thanks for posting this, Mike. I have mixed feelings about it. This "meat glue" is probably one of those things that when used properly and disclosed is useful (reduces waste) but when not disclosed and used unknowingly might be harmful in some circumstances. I, for one, will pay much closer attention to my meat "construction" in the future.
