Nice article! I do find what you say about trends and one cooks response interesting. I for one do not expect to find shiny meat. Yes it looks pretty but is far from the looks of any bbq I've seen outside of the tent (except as a magazine ad). I kind of equate this to the very pretty but uber skinny models in magazines giving a false image of what reality is.
I do find it sad that cooks are "afraid" to turn in basic bbq (dry ribs, not shiny meat) as that's how these trends are perpetuated like the "candied" meat that is prevalent now.
I don't know if I can put into words how I handle appearance other than I don't score up for shiny, I score for what looks (to me) like great bbq arraigned nicely.
The bottom line (for me) is I take appearance seriously unlike some judges I've seen who pretty much give 'em all the same score unless there's something seriously wrong in the box. Whether we admit it or not we all have our bias implanted in our brains and subconsciously it'll come out like it or not.
I do wish there was more guidance on appearance from KCBS in the beginning though.
