Believe it was something I read by John Willingham that meats in general, not jus the cryo packed meats, often have butcher shop debris (including bone chips/dust from the saws) on their surfaces and he suggested a rinse using apple cider vinegar.
One of the side benefits of the vinegar rinse was it also opened up the pores of the meat and enhanced the absorption of rubs/marinades as a result.
