Believe it is the vacuum that causes the pores to open up so as to more readily accept the rubs/marinades; the tumbling action I believe provides a more even distribution of the rub or marinade.
Last several times you responded to one of my posts you strongly urged me to join PETA and quit posting on Ray's BBQ Forum. Good to see all is better now.
