I am thinking about going doing some contests next year based on classic regional treatments for the main categories: Carolina pork; memphis style dry ribs; texas brisket; Lord knows what kind of chicken. Just a way to keep it interesting.
Anywho, I need someone(s) to point me to some good classic Texas brisket recipes to get started. On the net or in a book, wherever they are. Thanks.
