Walsh's books are really good. I'm a Virginia resident but a Texan by birth and upbringing. Salt, pepper and a dash of cayenne are all you need for Texas style brisket. That said, I've embraced KC influences in my own brisket recipe, and I think my brisket is better for it (family agreed too last time I cooked for them). Last month's Texas Monthly had a Texas brisket recipe in it that I'd be happy to share.
